Directions
- Cut the chicken breast into pieces about 5/8–3/4 inch (1.5–2 cm) thick.
- Season with salt and spices and marinate briefly with soy sauce and balsamic vinegar.
- Drizzle with olive oil.
- Sear on a very hot grill and finish in a combi oven to an internal temperature of 162–165°F (72–74°C).
- Thinly slice the vegetables, season with salt, drizzle with balsamic dressing, and grill. Grill the onion with its skin on and finish it in the oven with the chicken.
- Garnish with a thyme sprig.
